PŪRe Delicious:: Ken’s Tomatoes

KEN’S TOMATOES

I call this recipe Ken’s tomatoes because my father-in-law loved these more than anything I ever cooked. It’s a recipe years gone back from my mom and remembered by heart. I have no specifics so like me, you will taste and learn as you go. 

You can use any tomatoes for this, but I prefer beefsteak or vine. This is a colourful easy to make side dish.

Ingredients:

3-5 Tomatoes depending on size

Olive oil & Vinegar Dressings, 2 options:

¾ cup Salad Oil
¼ cup White Wine Vinegar
to taste Kosher Salt and Ground White Pepper (or freshly ground black pepper)

OR 

1 sprig fresh oregano
1 sprig fresh thyme
1 cup olive oil
¼ cup balsamic vinegar
salt and pepper to taste

Directions:

Slice the tomatoes fairly thin, on their side so they remain round in shape. Pour the oil and vinegar dressing over the tomatoes. Sprinkle with grated parmesan cheese, fresh parsley, and black pepper. Can be made a number of hours ahead and refrigerated. Serve. Beautiful colours on the table and a ton of flavour!
