PŪRe Delicious: Spicy Lime Tilapia

Ingredients:

2 tbsp olive oil

1 tsp red pepper flakes

5 cups lightly packed baby spinach

Asparagus tips (although we chop up the stalks and use them too!), approx. 12-18

4 Tilapia Fillets

3 scallions (sliced or finely chopped)

4 lime quarters

Salt and pepper

Directions:

To make “chili oil” combine the olive oil and red pepper flakes in a small bowl and microwave it on high for 30 seconds or so (adjust the red peppers to how spicy you like your food).Set it aside. 

For each serving lay an 18 inch length of aluminum foil flat on a work surface and arrange half the spinach and six asparagus tips in the center. Place a fillet on top, and top the fillet with half the scallion pieces, half the chili oil, and the juice from a lime quarter. Fold the foil up, like a tent, crimping the edges closed and creasing the sides to form the tent. 

Bake in oven at 400 degrees for about 20 minutes. Makes 4 servings.
