Mango, Tomato, Avocado Salad

Super healthy and has just the perfect balance of sweet and sour, and spice! Also beautiful on the table as it’s full of colour and sooo easy to make!

It has no additional fat beyond the avocado, which is a healthy fat. 

Ingredients (for 2 or 3 as a side salad here are my measurements)

1 Avocado
1 Mango
12 Cherry Tomatoes
½ Lemon, juiced
Fresh Cilantro (the key!)
Salt to taste

Directions:

Slice or cut the mango and avocado into chunks. Slice the tomatoes in half. Put it all in the bowl and squeeze the lemon on top. Toss it altogether. It is a great contrast in taste to the sweeter mango but also keeps the avocado from turning brown. Sprinkle a little sea salt and use lots of fresh chopped cilantro leaves (well. I do😊). Cilantro should go on last. Don’t make until the last minute to keep the avocados green. Not a good one for leftovers, but there isn’t usually any left!
