They are easy to incorporate into your diet AND many of us find then delicious. You can use the leaves, you can steam beets, roast them, or boil them (although they say boiling can reduce some of the vitamins).

Ingredients:

1-pound Beets (sliced cooked, drained)

½  cup white vinegar (or lemon juice ) 

½ cup Water 

1 teaspoon Salt

1/8 teaspoon Pepper

Sugar to taste ( I would typically add NO MORE than 1 tbsp. of sugar, more like a teaspoon as I like vinegar and watch my sugar but sometimes you just play with it until you get the taste you like the best)

If the beets have the greens attached, lop them off, leaving about 1/2 inch of the stems. Wash the beets thoroughly. You'll want to boil like-sized beets together, so pay attention when choosing which ones to boil.

Now you'll want to fill the pot. The water should cover the beets (it's ok if a little protrudes —you can also stir them to ensure even cooking.)

Now it's time to cook beets on the stove! Bring the beets and water to a boil over high heat. (You can reduce the heat once boiling if you wish; I don't.) Boil for 40-50 minutes or until a fork can pierce the beets easily.

Keep the beet water. When the beets cool you can easily take the skins off directly with your fingers by rubbing them gently Or if that's not working for you, use a knife and peel.

Cut them in slices or cubes, I slice.

Add them to a mason jar or two with some of the beet water, about ¾ full. You can also use regular water. Then I add the white vinegar and the sugar. Use salt and pepper when serving.
