Kale Salad

I grew kale this year because it is super healthy for you, I love it in smoothies, but I also went out a while back (and yes it was a while back!), ordered a kale salad and just loved it. Good crunch, good flavour, and good colour! I prefer purple kale over the green I just find the green kale a bit more bitter. But I’ll take either, any day. The dressing makes it. I used a classic Julia Child’s dressing that tasted similar to what I had that meal and it’s pretty darn nice!

Ingredients

Kale (lots of it!)

1 small shallot

Dijon mustard

Lemons

Olive oil

Ground fresh parmesan

Dressing Ingredients:

1 tablespoon scallions or 1 tablespoon shallot, minced

2 teaspoons Dijon mustard

2 tablespoons fresh lemon juice

1⁄2 cup olive oil

Salt & pepper

Directions:

Wash, drain, and dry the kale of your choice. As noted, I love the taste and colour of the purple kale but any of them will taste great. Kale refrigerates quite well, keeping crisp for a longer period of time.

Dressing - Combine all ingredients with a whisk in a measuring cup. Use immediately. (Although truthfully there really isn’t anything that spoils too much if you want to keep it longer.)

Toss the salad with enough oil. Sprinkle the cheese on top! Delish!
